Sakai Takayuki Inox - Usuba wtih Polycarbonate handle 180mm/210mm
Usuba: (literally vegetable knife). A square tip makes the knife more robust and secure feeling than the pointed santoku and gyuto and allows it to cut dense ingredients at the tip. Usually has a flat edge. Some makes have a slight tilt of the blade profile toward the handle to make the grip more comfortable so the hand tilts up slightly and uses the muscles under the forearm. Popular alternative to the santoku. General size is 165 mm to 180 mm.

Use & Care
